    • 学士学位毕业论文酶解对玉米醇溶蛋白水溶性的影响学生姓名:陈俊学 号:20124064101指导教师:李丹所在学院:食品学院专 业:粮食工程中 国 ·大 庆2016 年 5 月黑龙江八一农垦大学本科毕业论文摘 要玉米醇溶蛋白是玉米黄粉其中利用价值较高的副产物,其附加价值有很高的提升空间本课题是以玉米醇溶蛋白为原料,通过胰蛋白酶水解玉米醇溶蛋白,并测定水解后玉米醇溶蛋白的最佳水解条件,溶解条件,以及在两者最佳条件下,醇溶蛋白对Fe 2+ Cu2+的螯合能力的影响, 以使其有更大的应用空间通过单因素试验研究,得出胰蛋白酶水解玉米醇溶蛋白的最佳工艺条件为:反应时间2h,反应温度27℃,酶添加量640U/g,玉米醇溶蛋白底物浓度为7%,乙醇浓度为75%, 并对在最佳工艺条件下水解的脱玉米醇溶蛋白的水解度和与Fe 2+Zn2+螯合能力进行研究关键词:玉米醇溶蛋白,酶解,水解度,螯合能力AbstractZein is the by-product of corn gluten by high value, high added value promotion space. This topic is based on zein as raw materials, by Trypsin Hydrolysis of zein, and determination ofhydrolysis of zein degree of hydrolysis and Zn2+ chelating ability, provide a theoretical basisfor further development and utilization of zein.
